RICETTE DI “FRITTELLE SALATE”

RICETTA DIETA MEDITERRANEA.
“FRITTELLE SALATE”.
Il cavolfiore è un ortaggio molto importante nell’alimentazione di grandi e bambini essendo ricco di sali minerali e vitamine ed è essenziale in ogni tipo di dieta.  Ci sono molte varietà per cui il cavolfiore si trova in autunno, inverno e anche in primavera.Il  cavolfiore si presta alla realizzazione di mille ricette.

Ingredienti per 4 persone:

  • Cimette di cavolfiore: 300 gr
  • Farina: 150 gr
  • Lievito di birra: 1 cucchiaino
  • Olio per friggere: q.b.
  • Sale: q.b.

Preparazione:

-Stemperare la farina con 2 dl d’acqua appena tiepida, sbriciolare il lievito, scioglierlo in mezzo bicchiere d’acqua tiepido e mescolarlo alla pastella che alla fine dovrà avere la consistenza di una crema piuttosto liquida.
-Coprire e lasciare riposare per un’oretta.
-Intanto tagliare e lavare le cimette, quindi cuocerle in acqua salata o al vapore, tenendole piuttosto croccanti.
-Scolarle e farle raffreddare distendendole su un canovaccio.
-Scaldare in una padella abbondante olio, tuffare 3-4 cimette per volta nella pastella, rivestendole in modo uniforme , poi passarle nell’olio e friggerle a fuoco medio, girandole un paio di volte, finchè saranno dorate.
-Estrarle man mano con il cucchiaio forato, farle asciugare per un attimo su carta da cucina poi salare e servire le frittelle ben calde.

RECIPES “SALTY PANCAKES”

MEDITERRANEAN DIET RECIPE.
“SALTY PANCAKES”.
Cauliflower is a very important vegetable in the diet of adults and children being rich in minerals and vitamins and is essential in any type of diet. There are many varieties that cauliflower is in the fall, winter and even in primavera.Il cauliflower lends itself to the creation of thousands of recipes.

Ingredients for 4 people:

  • Cauliflower florets: 300 gr
  • Flour: 150 gr
  • Yeast: 1 teaspoon
  • Oil for frying: q.b.
  • Salt: q.b.

Preparation:

-Dissolve the flour with 2 dl of lukewarm water, crumble the yeast, dissolve it in half a glass of warm water and mix it to the batter that eventually will have the consistency of a cream rather liquid.
-Cover and let stand for an hour.
-In the meantime cut and wash the tops, then cook them in salted water or steamed, rather than keeping them crispy.
-Drain and cool them by stretching them on a towel.
-Boil in a deep fat frying pan, dip 3-4 florets at a time into the batter, coating them evenly, then put in the oil and fry over medium heat, turning once or twice, until they are golden.
-Extract as with slotted spoon, let them dry for a moment on paper towels and season with salt and serve piping hot pancakes.
