RICETTA DI “NUNNATA RI LUVARU O DI SARDIEDDA A FRITTIEDDA” ( POLPETTINE DI NEONATA)

RICETTA DIETA MEDITERRANEA.
“NUNNATA RI LUVARU O DI SARDIEDDA A FRITTIEDDA”.
La neonata (la nunnata, la neonata o forse (dal greco) non-nata) di pesce e, specialmente , di pagelli o di sarde è molto apprezzata dalle nostre parti e in tutta la Sicilia e – nonostante vi siano apposite leggi che ne vietano, in certi periodi dell’anno, la pesca – la si può comprare presso fidati riattieri in ogni stagione, anche se nei nostri mari si ha soprattutto ad inizio di primavera. E’ una squisitezza da…pascià, non solo se preparata a polpette fritte (sia se vengano tuffate nel sugo di pomodoro o no ) ma anche semplicemente bollita e condita con olio, un po’ di sale e prezzemolo. Quella cucinata in frittelle può essere gustata in molte tipiche friggitorie , insieme ad altra frittura di pesce: cicirieddu o maccarrunieddu, siccitieddi e calamaricchi, sardi e scurmi a llinguata, ecc.

Ingredienti:

  • Neonata di pagello o di sardella: 500 gr
  • Caciocavallo o pecorino grattugiato: 50 gr
  • Pangrattato: 50 gr
  • Olio Extravergine di Oliva: q.b.
  • Uova: 3
  • Sale e pepe: q.b.
  • Prezzemolo tritato: q.b.

Preparazione:

-Separare i tuorli dagli albumi; sbattere, in una ciotola, gli albumi a neve , e, in un’altra i tuorli.
-Unire ai tuorli sbattuti la neonata(precedentemente lavata nel colabrodo e fatta sgocciolare), il pangrattato, il formaggio grattugiato, il prezzemolo, sale e pepe.
-Fare amalgamare ben bene tutti gli ingredienti.
-Aggiungere, mescolando delicatamente, i bianchi d’uova montati a neve.
-Versare in una padella capiente, nell’olio abbastanza caldo, l’impasto a cucchiaiate.
-Rivoltare le polpettine via via ottenute, cioè i frittieddi ri nunnata, in modo tale che si che si dorino da tutti i lati.
-Metterle, quindi, su apposita carta per far assorbire l’eventuale olio in eccesso.
-Servire calde, associandole a fette di limone.

Un’altra ricetta, propone di:

-Lessare a vapore la neonata, cucinare, per una decina di minuti, nel colabrodo posto sopra una pentola piena d’acqua;
-Scolare, fare freddare e mettere in una terrina.
-Condire con l’intingolo (olio, prezzemolo tritato, sale, pepe succo di limone) precedentemente preparato.

MEDITERRANEAN DIET RECIPE
 ”NUNNATA RI LUVARU OR SARDIEDDA A FRITTIEDDA” (BALLS OF BABY GIRL).

Preparation:

-Making well – mix all ingredients well .
- Add , stirring gently , egg whites beaten stiff .
- Pour into a large frying pan , the oil hot enough, the dough by spoonfuls .
- Turn the meatballs gradually obtained , ie frittieddi re nunnata , in such a way that it dorino from all sides .

- Serve hot , associating them with lemon slices.

Another recipe , suggests:

-Steam , boil the baby , cooking it for about ten minutes , place in colander over a pot full of water ;
