RICETTA DI “CIPOLLINE CARAMELLATE”

RICETTE DIETA MEDITERRANEA.
“CIPOLLINE CARAMELLATE”.
La massaia, come il cuoco, deve  possedere molteplici doti. Fra queste : essere buongustaia, non abbuffina, giusta nel saper dividere i sapori, prudente nell’insaporire le vivande, fantasiosa e creativa, non troppa avara nè troppo prodiga, forte e robusta a sopportare il calore della cucina, astuta, educata ma eloquente, piacente e pulita, ma soprattutto poeta, anzi poetessa, per cantar lodi della sua cucina e pittrice, per ben colorar carni e vivande.

Ingredienti:

  • Cipolline: 1 kg
  • Burro: 1 ricciolo
  • Olio Extravergine di Oliva: 2 o 3 cucchiai
  • Aceto di vino: mezzo bicchiere
  • Vino bianco: 2 bicchieri
  • Zucchero: 2 cucchiai
  • Sale: q.b.
  • Acqua o brodo per portare a cottura ( circa 2 ore): q.b.

Preparazione:

-Procurarsi delle piccole cipolle, eliminare la pellicola esterna sotto il rubinetto dell’acqua, altrimenti l’olio che si sprigiona vi farà lacrimare.
-Passare in un tegame con un ricciolo di burro e due cucchiai di olio.
- Appena soffrigge, abbassare la fiamma e unire l’aceto e il vino bianco.
-Ricoprire con acqua, insaporire con sale e lasciare cuocere.
-Cinque minuti prima della fine della cottura unire lo zucchero e amalgamare ben bene.
-Servire calde.

RECIPE “ONIONS CARAMELIZED”

MEDITERRANEAN DIET RECIPES .
“ONIONS CARAMELIZED”.
The housewife , as the cook , must possess various qualities . Among them : to be gourmet , not abbuffina , just knowing how to divide the flavors , prudent nell’insaporire the food , imaginative and creative , not too stingy or too lavish , strong and sturdy to withstand the heat of the kitchen, smart , educated but eloquent , attractive and clean, but above all a poet, a poet indeed , to sing praises of his kitchen and painter , for well colorar meats and foods.

Ingredients:

  • Spring onions: 1 kg
  • Butter: a knob
  • Extra Virgin Olive Oil: 2 or 3 tablespoons
  • Wine vinegar: half a glass
  • White wine: 2 glasses
  • Sugar: 2 tablespoons
  • Salt : q.b.
  • Water or broth to cook ( about 2 hours ): q.b.

Preparation:

-Obtain small onions, remove the outer skin under the tap water, or oil that is released will make you weep.
-Go in a pan with a knob of butter and two tablespoons of oil.
-Just fry, lower the heat and add the vinegar and white wine.
-Cover with water, season with salt and cook.
-Five minutes before end of cooking time, add the sugar and mix very well.
-To serve hot.
