RICETTA DIETA MEDITERRANEA.
“NUVOLE DI BIANCHETTI ALL’ACETO BALSAMICO”.
Bianchetto è il termine regionale generico per indicare il novellame di sarde e acciughe, così chiamato perchè in questa fase dello sviluppo ha un caratteristico colore chiaro. Nelle varie regioni d’Italia il novellame è conosciuto con nomi diversi : ” gianchetto” in Liguria, ” cicinelli” nel Lazio e “rosa di mare” in Calabria, dopo una lavorazione che vede l’utilizzo di peperoncino tra gli ingredienti principali.

Ingredienti:

  • Bianchetti: 250 gr
  • Farina: q.b.
  • Aceto balsamico: q.b.
  • Olio per friggere: q.b.

Preparazione:

-Mettere i bianchetti in uno scolapasta e con molta cura lavare e sgocciolare bene.
-Asciugare con un canovaccio e passare nella farina, poi versare a cucchiaiate nell’olio bollente.
-Non appena le frittelle saranno dorate da entrambe le parti, prelevare con un mestolo forato e mettere a perdere l’unto su carta assorbente da cucina.
-Sistemare sul piatto da portata e aromatizzare con qualche goccia di aceto balsamico.
-Se si preferisce, si possono anche passare i bianchetti in una pastella e poi friggere. I puristi ritengono tuttavia che il delicato sapore del novellame venga coperto dalla pastella.

“CLOUDS OF BIANCHETTI BALSAMIC.”
