RICETTA DI “MELANZANA AL FORNO”

RICETTA DIETA MEDITERRANEA.
“MELANZANA AL FORNO”.
La melanzana, carne dei poveri, si presta a moltissimi utilizzi.

Ingredienti:

  • Melanzana ( la melanzana è molto leggera anche se voluminosa, a volte ce ne vogliono 5\6 per fare un chilo): 1 kg
  • Pane grattugiato: 2 cucchiai 
  • Olio Extravergine di Oliva: 50 gr
  • Foglie di basilico ( venti circa): 1 manciata 
  • Pomodori maturi: 3
  • Vino bianco: 1\2 bicchiere 
  • Sale: q.b.
  • Prezzemolo: ( una manciatina ) ben triturato per guarnire a cottura ultimata

Preparazione:

-Dopo averle ben lavate, tagliare le melanzane a fette nel senso della lunghezza ( sei fette ognuna ).
-Salare leggermente e passare in un recipiente bucherelleto oppure su un piatto inclinato ( con un peso sopra) per qualche ora perchè perdano il liquido amarognolo.
-Adagiare in una teglia da forno, porre su ogni fetta una fettina di pomodoro e un pizzico di pane grattato.
-Finito il lavoro, condire con olio e passare in forno ben caldo ( tempo 15\20 minuti saranno cotte).
-Intanto preparare un trito di foglioline di basilico : a metà cottura farle cadere a pioggia sopra le melanzane.
-A questo punto bagnare con vino bianco, lasciare in forno ancora per il tempo occorente a che il vino evapori quindi porre su un piatto di portata e guarnire con il prezzemolo finemente tritato.

RECIPE FOR “BAKED EGGPLANT”

MEDITERRANEAN DIET RECIPE .
“BAKED EGGPLANT”.
The eggplant , meat of the poor , lends itself to many uses.

Ingredients:

  • Eggplant ( aubergine is very light though voluminous , sometimes it takes 5\6 to make a kilo ): 1 kg
  • Bread crumbs: 2 tablespoons
  • Extra virgin Olive Oil: 50 gr
  • Basil leaves ( about twenty ): 1 handful
  • Ripe tomatoes: 3
  • White wine: 1\2 cup
  • Salt: q.b.
  • Parsley: ( a handful ), well cooked chopped for garnish

Preparation:

-After having well washed, cut the eggplant into slices lengthwise (six slices each).
-Salt slightly and puree in a bowl or on a plate inclined bucherelleto (with a weight above) for a few hours because they lose their bitter liquid.
-Llay down in a baking dish, place each slice on a slice of tomato and a pinch of bread crumbs.
-Finished wrk, drizzle with oil and bake in a hot oven (time 15 \ 20 minutes are cooked).
-In the meantime prepare chopped basil: half cooked them fall in rain over the eggplant.
-At this point add some white wine, leave it in the oven again for the time occorente in the wine evaporate then place on a serving dish and garnish with finely chopped parsley.
