RICETTA DI “MELANZANA AL FORNO”

RICETTA DIETA MEDITERRANEA.

 RECIPE FOR “BAKED EGGPLANT “

MEDITERRANEAN DIET RECIPE.
“EGGPLANT BAKED”.
The eggplant, meat of the poor, lends itself to many uses. With imagination you can customize by adding or enriching the dishes.

For 6 people.

Ingredients:

  • Aubergine (eggplant is very light but bulky, sometimes it takes 5/6 to make a kilo): 1 kg
  • Bread crumbs: 2 tablespoons
  • Extra Virgin Olive Oil: 50 gr
  • Basil leaves (about twenty): 1 handful
  • Ripe tomatoes: 3
  • White wine: 1/2 cup
  • Salt: q.b.
  • Parsley chopped for garnish well cooked: 1 handful

 Preparation:

- After having well washed, cut the eggplant into slices lengthwise (six slices each).
- Salt them lightly and pass them in a perforated container or on an inclined plate (with a weight on top) for a few hours because they lose their bitter liquid.
- Place them in a baking dish, place slices on each a slice of tomato and a pinch of bread crumbs.
- When you’re done, drizzle with oil and bake in a hot oven (15-20 minutes long will be cooked).
-In the meantime prepare a chopped basil leaves: halfway through cooking will do them a rain fall over the eggplant.
- Pour in the white wine, leave it in the oven again to the time required to evaporate the wine then place on a serving dish and garnish with finely chopped parsley
